Welsh gingerbread

Yield: 6 Servings

Measure Ingredient
3 lb. flour

7 ts ground ginger

6 oz black treacle

¼ pt milk

6 oz Demerara sugar

¼ lb butter

2 oz minced peel

½ ts bicarbonate'soda

1 ts cream of tartar

BARA SINSIR CYMREIG Sift the flour with the bicarbonate of soda and cream of tartar. Rub the butter into the flour and add the other dry ingredients.

Add the treacle and milk. Mix well. Place in a greased tin and bake in a slow oven (300/F. or Mark 2) for 1½ hours.
