Orange gingerbread

Measure Ingredient
⅓ cup Applesauce
1 cup Dark molasses
1¼ cup Orange juice
1 tablespoon Finely grated orange rind
2½ cup Whole-wheat flour
1 teaspoon Baking soda
1 teaspoon Cinnamon
2 teaspoons Ground ginger
½ teaspoon Salt
½ cup Raisins

Some time ago (I'm behind in my reading of ff digests!) a request was made for a gingerbread recipe. Here's one that I use, slightly modified (to remove the added oil) from a recipe from a February 1994 issue of Vegetarian Times.

Preheat over to 350 degrees F. In a large bowl, mix together wet ingredients. In a medium bowl, sift together dry ingredients. Add raisins.

Add dry ingredients to wet ingredients and mix well. Pour into a non-stick 9-inch by 13-inch pan and bake 40 minutes, making sure not to overbake.

Gingerbread will be moist.
