Walnut and sweet potato casserole

Yield: 2 servings

Measure Ingredient
4 cups Cooked brown rice
1 each Sweet potato thickly peeled
2 eaches Eggs
\N \N 3-4 garlic cloves finely chopped
6 eaches Green onions, chopped
½ cup Walnuts, chopped finely, in blender
1 cup Water or stock

Puree sweet potato with water or stock in blender. Add more water or stock if necessary. Add eggs and blend briefly. Combine all ingredients and bake for 30-45 minutes at 350F. Origin: Yeast Free Feast. Shared by: Sharon Stevens, Oct/94.
