Vodka-spiked gazpacho

Yield: 1 Servings

Measure Ingredient
2 pounds Ripe tomatoes; cored and chopped
2 \N Ths red-wine vinegar
1 small Red onion; chopped
2 \N Scallions; chopped
1 \N Hot or mild green chill; chopped
2 \N Garlic cloves; finely minced
1 small Cucumber; chopped
¼ cup Chopped coriander leaves
2 tablespoons Chopped fresh basil leaves
1 \N Lime; juice of
¼ cup Olive oil
¼ cup Vodka*
\N \N Salt; freshly ground pepper, to taste
1 \N Ripe avocado; sliced
\N \N Sour cream; optional
\N \N Croutons; optional

In a large serving bowl, combine all ir gredients except avocado, sour crear and croutons. Adjust seasonings to taste. Serve with an avocado slice, a dollop sour cream and a few croutons, if desire( Makes 6 servings.
