Vegetarian eggnog

Yield: 1 Servings

Measure Ingredient
2.00 \N 10-oz packages of silken
\N \N Regular or low-fat tofu
1.00 \N 16 oz box vanilla soymilk or
\N \N Rice milk
1.00 tablespoon Plus vanilla extract
¼ cup Sugar
2.00 tablespoon Brown sugar
¼ teaspoon Ground tumeric
½ \N To 1 cup rum or brandy,
\N \N Optional Nutmeg

In a blender or food processor, combine all ingredients except nutmeg; blend thoroughly stopping occasionally to scrape down sides. Serve well chilled and dusted with nutmeg. Serves about 8.

*** They also had a LOW-FAT Eggnog. IF anyone is interested in that one I'll post it too!
