Low-fat eggnog

Ingredients

| 4 | cups | Skim milk |
| 12 | ounces | Evaporated skim milk |
| 8 | ounces | Frozen egg product, thawed |
| ½ | cup | Sugar |
| ½ | cup | Light rum |
| 1 | teaspoon | Vanilla |

Directions
Over medium heat stir skim milk, evaporated skim milk, egg product and sugar about 10 minutes or until slightly thickened. DO NOT BOIL.
Stir over a bowl of ice water 2 minutes. Cover; chill 4 to 24 hours.
Stir in rum and vanilla. Stir in more skim milk till desired thickness. Sprinkle with ground nutmeg.
