½ cup | Bulgur wheat |
1½ cup | Chopped veggies (carrots, celery, zucchini, mushrooms, cabbage, or whatever) |
½ cup | Chopped onion |
2 tablespoons | Vegetable oil |
1 teaspoon | Salt |
\N \N | Freshly ground black pepper |
\N \N | Fresh or dried herbs |
\N \N | Garlic powder (if desired) |
½ teaspoon | Non-alum baking powder |
¾ cup | Chickpea flour |
In a medium saucepan, bring water to a boil. Add bulgur, chopped onion, and vegetables to saucepan; stir mixture and cover. Simmer until water is absorbed, about 10 minutes. Mix in remaining ingredients. Let stand a few minutes if mixture is not thick enough to form into patties. Shape into small rounds or oblong patties and cook over moderately low heat on oiled griddle or skillet until lightly browned, about 5 minutes on each side.
