| 2 | cans | Chick-peas, drained and mashed (10 1/2 oz ea) |
| 1½ | cup | Finely chopped pecans |
| 1½ | cup | Whole-wheat bread crumbs |
| 1¼ | cup | Finely chopped spinach |
| ¾ | cup | Grated carrot |
| ¼ | cup | Chopped green pepper |
| ¼ | cup | Chopped red pepper |
| 6 | Shallots, chopped | |
| 2 | tablespoons | Chopped celery |
| 1 | tablespoon | Chopped fresh parsley |
| ¼ | teaspoon | Pepper |
| ¼ | cup | Mayonnaise |
| 2 | tablespoons | Butter or margarine |
Directions
Combine chick-peas, pecans, bread crumbs, spinach, carrot, green and red pepper, shallots, celery, parsley and mayonnaise. Shape into 6 patties.
Saute patties in butter, cooking until browned on both sides.
