Place all cut vegetables except onion in a bowl. Mix oil, oregano, salt and pepper to taste and pour over vegetables; coat all vegetables thoroughly.
Alternate veggies on ten inch skewers, dividing equally. Broil 3 inches below heat until tender and crisp, turning several times and basting with remaining oil mixture.
Try celery chunks, tomato wedges, unpeeled cucumber or parboiled new potatoes as alternative vegetables in this dish.
