Vegetable crudite

Yield: 4 servings

Measure Ingredient
1 cup Canned corn, drained
1 small Green onion, chopped
1 \N Green pepper, chopped
1 \N Garlic clove, minced
1 large Fresh tomato, chopped
¼ cup Fresh parsley, chopped
¼ cup Extra virgin olive oil
2 tablespoons Balsamic vinegar
\N \N Salt
\N \N Pepper
1 \N Scallion, chopped

Mix corn with onion, green pepper, garlic and tomato. In a separate small bowl or cup, mix olive oil and vinegar. Pour over vegetable, toss with parsley; season with salt and pepper. Garnish each serving with scallions. Submitted By MICHAEL ORCHEKOWSKI On 08-07-95
