Veal bianco

Ingredients

1 | small | Clove of garlic, minced |
½ | cup | Mushrooms, sliced |
2 | tablespoons | Olive oil |
6 | Medallions of veal, pounded lightly | |
Flour | ||
2 | tablespoons | Cognac |
½ | cup | Heavy cream |
½ | cup | Veal or chicken stock |
Parsley for garnish |
Directions
Saute garlic and mushrooms in oil for a few minutes. Dredge veal in flour, shaking off excess. Brown veal in pan, adding a little more oil if necessary. Add remaining ingredients and cook for 5 minutes or until sauce thickens slightly. Garnish with parsley. Serves 6.
