Veal bianco

Ingredients

| 1 | small | Clove of garlic, minced |
| ½ | cup | Mushrooms, sliced |
| 2 | tablespoons | Olive oil |
| 6 | Medallions of veal, pounded lightly | |
| Flour | ||
| 2 | tablespoons | Cognac |
| ½ | cup | Heavy cream |
| ½ | cup | Veal or chicken stock |
| Parsley for garnish | ||
Directions
Saute garlic and mushrooms in oil for a few minutes. Dredge veal in flour, shaking off excess. Brown veal in pan, adding a little more oil if necessary. Add remaining ingredients and cook for 5 minutes or until sauce thickens slightly. Garnish with parsley. Serves 6.
