Turkey loaf with spinach

1cupOnions, peeled & diced
1largeCarrot, peeled & sliced
¼cupBread crumbs, plain
4Egg whites
¼teaspoonSalt
¼teaspoonCayenne pepper
1teaspoonPaprika
½teaspoonThyme
10½ounceSpinach, frozen chopped; cooked & drained
2Egg whites
2tablespoonsParmesan; grated
¼teaspoonSalt
¼teaspoonPepper, black
Pam vegetable oil spray

Directions

FILLING

Place the turkey, onions and carrot in the bowl of a food processor fitted with the steel blade and pur#e. Combine with the remaining meat ingredients in a bowl. Mix well.

Combine the filling ingredients (but not the vegetable spray) and mix well.

Spray a baking sheet with vegetable oil spray. Place half the meat on the sheet and form a rectangle 8 x 4". Make a long mound in the center with the spinach and then cover with the remaining meat, smooth the edges. Bake for 1 hour in a preheated 375 degree oven and then serve hot, warm or chilled.
