Tuna pizza with caponata and prosciutto

Yield: 4 Servings

Measure Ingredient
1 \N 12-inch italian bread shell for pizza
1 teaspoon Olive oil
1 can (7 1/2 oz.) caponata
1 can (6 oz.) starkist solid white tuna; drained and chunked
8 slices (1 oz.) prosciutto
2 \N Plum tomatoes; sliced 1/4, up to 3
1 cup Crumbled feta cheese
1 cup Shredded mozzarella cheese
\N \N Crushed red pepper

1. Place bread shell on foil-lined baking sheet; brush to edge with oil.

2. Spread caponata to within 1 inch of edge.

3. Top with tuna, prosciutto, tomatoes, feta and mozzarella cheeses.

4. Bake in a 450 degree F oven 10 to 12 minutes or until cheeses are melted and pizza is heated through. Cool 1 minute before slicing.

5. Serve with crushed red pepper, if desired.
