Tossed green salad with vinaigrette dressing

1smallHead green leaf lettuce
1smallHead red leaf lettuce
2Endives
1smallBunch watercress
1tablespoonRed wine vinegar
1teaspoonDijon mustard
Salt and pepper
¼cupOil, olive or vegetable, or half of each
1tablespoonMinced parsley

Directions

DRESSING

Pull apart salad leaves. Wash and dry greens in a salad spinner or colander. Put greens in a large salad bowl. In a small bowl whisk together vinegar, mustard, salt and pepper. Slowly whisk in oil. Stir in parsley.

Pour dressing over salad and toss to combine.
