Tomato with pesto

Ingredients

| ⅔ | cup | Basil leaves, packed |
| 3 | tablespoons | Parmesan cheese |
| Salt & pepper to taste | ||
| 3 | larges | Tomatoes sliced 1/2\" thick |
| ⅓ | cup | Olive oil |
Directions
In a blender or food processor, finely chop garlic, pine nuts, basil, olive oil, cheese, salt and pepper. Drizzle tomato slices with olive oil and dollop each slice with 2 tsp of pesto, and serve remaining pesto on side.
Tomato Pesto Pasta Salad
Prepare pesto as above. Toss with 2 diced tomatoes, 4 thinly sliced scallions, 20 sliced pitted black olives and 12 oz cooked macaroni.
