Tomato and harissa salad

Measure Ingredient
3 \N Tomatoes; sliced (3 to 4)
1 \N Red onion; chopped
1 tablespoon Harissa dressing
1 \N Lemon; juice of
3 tablespoons Extra virgin olive oil
\N \N Salt and pepper
1 \N Sprigs coriander; roughly chopped

In a small bowl mix together the ingredients for the dressing: the Harissa, lemon juice and olive oil (3-4 parts oil to 1 part lemon juice) and a pinch of salt. Whisk together and add freshly ground black pepper.

Lay out the sliced tomatoes on a plate and sprinkle with the chopped onion, spoon the dressing over the tomatoes and garnish with the chopped coriander, if required, and serve immediately.
