Tomato, green pepper, and cucumber salad

3 mediums Ripe tomatoes -- diced
1 small Green bell pepper -- diced
2 mediums Cucumbers, pared and sliced
Very thin
¼ cup Minced parsley
¼ cup Minced fresh mint leaves
3 Green onions, including
Crisp greens -- thinly
Sliced
¼ cup Fresh lemon juice
¼ cup Olive oil
teaspoon Salt

Directions

Place tomatoes, pepper, cucumber, parsley, mint (if used), and green onion in a salad bowl. Beat together lemon juice, olive oil, and salt; pour over vegetables, toss, and serve.
