Tofu-basil dressing

Measure Ingredient
½ Silken (creamy) tofu; (about
2 tablespoons Cider vinegar
2 tablespoons Unsweetened apple; or orange
½ teaspoon Dijon mustard
1 small Minced or pressed
2 tablespoons Fresh basil; chopped
¼ teaspoon Salt

Covered and refrigerated, Tofu-Basil Dressing will keep for about a week. Use to dress tossed salads, chopped tomatoes, steamed green beans, asparagus, or little new potatoes
