Yield: 4 Servings
|16 ounces||Tofu, firm|
|1 medium||Onion, sliced thinly|
|6 mediums||Tomatoes, julienned|
|1 teaspoon||Ginger, fresh minced|
|3 tablespoons||Soy sauce|
|1 teaspoon||Sesame seeds, toasted|
|Lemon juice to taste|
Drain and rinse the tofu. Cut it into ½ inch cubes and place the cubes in a mixing bowl. Add the tomatoes and onions. In a separate container, mix the ginger, soy sauce, sesame seeds and lemon juice.
Pour this mixture over the tofu and vegetables. Turn gently and allow to marinate in the refridgerator for a few hours before serving.
Serve over cous cous or pasta.
