Three flavoured chicken

Measure Ingredient
\N \N Whole Thai red and green fresh chiles
\N small Dried shrimps
\N \N Peanuts
\N \N Fresh ginger; cut in peanut sized small cubes
\N \N Lemongrass; the bulby thick part only; cubed
\N \N Shallots; cut in small cubes
\N \N Limes; cut in wedges, each wedge cut in three with the skin still on; choose organic grown

On a big plate arrange about ½ cup each of the ingredients. With your hand or a spoon take a piece of each and munch. Many thais cut out the lemongrass.
