Texas stir-fry

Ingredients

1Red onion; thinly sliced
1Sweet red bell pepper
1Rib bed and cut into 2x2 inch strips.
½cupFrozen corn kernels
1mediumSize clove garlic; finely chopped
1tablespoonLime juice
2teaspoonsChili powder
1dashDried cilantro
½cupCanned black beans
Salt and freshly ground pepper to taste

Directions

In a medium frying pan over medium high heat, cook the onion in the olive oil for 1 minute. Add the bell pepper, corn, garlic, lime juice, chili powder, cilantro, salt and pepper. Stir and cook Until vegetables are crisp-tender. Stir in ½ cup canned black beans. Stir until hot. Serve warm.
