Texas stir-fry

Yield: 1 servings

Measure Ingredient
2 tablespoons Olive oil
1 \N Red onion; thinly sliced
1 \N Sweet red bell pepper
1 \N Rib bed and cut into 2x2 inch strips.
½ cup Frozen corn kernels
1 medium Size clove garlic; finely chopped
1 tablespoon Lime juice
2 teaspoons Chili powder
1 dash Dried cilantro
½ cup Canned black beans
\N \N Salt and freshly ground pepper to taste

In a medium frying pan over medium high heat, cook the onion in the olive oil for 1 minute. Add the bell pepper, corn, garlic, lime juice, chili powder, cilantro, salt and pepper. Stir and cook Until vegetables are crisp-tender. Stir in ½ cup canned black beans. Stir until hot. Serve warm.
