|2 tablespoons||Olive oil|
|1||Red onion; thinly sliced|
|1||Sweet red bell pepper|
|1||Rib bed and cut into 2x2 inch strips.|
|½ cup||Frozen corn kernels|
|1 medium||Size clove garlic; finely chopped|
|1 tablespoon||Lime juice|
|2 teaspoons||Chili powder|
|1 dash||Dried cilantro|
|½ cup||Canned black beans|
|Salt and freshly ground pepper to taste|
In a medium frying pan over medium high heat, cook the onion in the olive oil for 1 minute. Add the bell pepper, corn, garlic, lime juice, chili powder, cilantro, salt and pepper. Stir and cook Until vegetables are crisp-tender. Stir in ½ cup canned black beans. Stir until hot. Serve warm.
