Quick chicken stir-fry

Yield: 4 Servings

Measure Ingredient
2 tablespoons Oil
3 \N Boneless skinless chicken breast halves
1 \N Garlic clove; minced
1 cup Broccoli flowerets
1 cup Red pepper strips
1 cup Carrot slices
¼ cup Sliced green onions
½ cup Miracle Whip
1 tablespoon Soy sauce
½ teaspoon Ground ginger

Heat oil in skillet over high heat.

Cut chicken into strips, add to skillet with garlic; stir-fry 3 minutes.

Add vegetables; stir-fry an additional 3 minutes.

Reduce heat to medium; stir in Miracle Whip, soy sauce and ginger.

Simmer 1 minute.

Serve over rice.
