1 cup | Chopped tomatoes |
1 cup | Carrots; shredded |
1 cup | Black beans; rinsed/drained |
¼ cup | Chopped fresh basil |
2 tablespoons | Lemon juice |
1 tablespoon | Extra-virgin olive oil |
\N \N | Feta cheese; crumbled |
Prepare taboule as directed on package; cover. Refrigeratoe 30 minutes.
Stir in remaining ingredients, except cheese, cover. Refrigerate at least 2 hours. Serve on a bed of lettuce. Sprinkle with cheese. Makes 4 servins.
