Swiss-chicken bake

Yield: 1 Servings

Measure Ingredient
4 \N Chicken breasts, skinned and deboned if you prefer
1 cup Uncooked rice
1 pack Chicken broth ( you can also use 1/2 packet onion soup mix)
1 cup Water
1 cup V-8 juice
½ \N Diced green pepper
1 medium Onion diced
\N \N Salt and pepper
¾ cup Swiss cheese, grated

In buttered casserole dish, place raw rice. On top of rice, place chicken breasts and sprinkle with salt and pepper. Sprinkle onion and green pepper on top. Pour chicken broth, hot water, and V-8 over top. Sprinkle cheese on top. Bake at 350F uncovered for an hour, then uncover and bake for another 15 minutes. This is just easy comfort food.
