Swiss-chicken bake

Ingredients

4Chicken breasts, skinned and deboned if you prefer
1cupUncooked rice
1packChicken broth ( you can also use 1/2 packet onion soup mix)
1cupWater
1cupV-8 juice
½Diced green pepper
1mediumOnion diced
Salt and pepper
¾cupSwiss cheese, grated

Directions

In buttered casserole dish, place raw rice. On top of rice, place chicken breasts and sprinkle with salt and pepper. Sprinkle onion and green pepper on top. Pour chicken broth, hot water, and V-8 over top. Sprinkle cheese on top. Bake at 350F uncovered for an hour, then uncover and bake for another 15 minutes. This is just easy comfort food.
