Sweet garden peas with mint

Ingredients

| 2 | tablespoons | Scallions, minced |
| 1 | teaspoon | Butter |
| ½ | teaspoon | Salt |
| ¼ | teaspoon | Pepper |
| 30 | ounces | Frozen tiny peas, thawed |
| ½ | cup | Water |
| 2 | tablespoons | Shredded fresh mint |
Directions
Place lettuce in a heavy medium pan. Add scallions, butter, salt, and pepper. Cover and cook on high until steam starts to rise. Add peas and water. Cover again, bring to a boil, then lower heat and simmer 10 to 15 minutes or until peas are tender but still retain their bright color. Stir in mint, cover, and steam 1 minute. Serve immediately.
