Sushi-meshi (rice with sweet vinegar sauce)

Yield: 6 Servings

Measure Ingredient
10 cups Rice
3 cups Vinegar
5 tablespoons Salt
2 cups Sugar
1 tablespoon Gourmet powder (m.s.g)
¼ cup Dried shrimp
\N \N Filling:
1½ pounds Fresh shrimp
5 tablespoons Sugar
1 teaspoon Gourmet powder (m.s.g.)
½ teaspoon Salt
\N \N Red coloring

Mix the ingredients for the seasoning and bring to a boil and strain.

Add to the rice. This is the base for all sushi dishes.

Boil the shrimps. Shell and bray in surabachi. (Corregated earthenware bowl). Add the seasonings. Fry in slightly greased pan until dry. Add to sushi-meshi.
