Yield: 24 Servings
|1 each||Yeast cake, fresh|
|3½ cup||Flour, sifted|
|1||Fat; for deep frying|
Heat milk slightly and dissolve yeast. Add 1½ cups flour and beat until smooth. Cover and let rise in a warm place until double in bulk (about two hours). Cream shortening, salt, and sugar together; add egg and blend. Stir this mixture into the yeast sponge. Add remaining flour and beat well for about five minutes. Rub top with shortening and let rise again until double in bulk. Roll about ½" thick and cut with floured doughnut cutter. Allow to rise about 45 minutes, then fry in deep fat heated to 365 F. until brown, about three to five minutes. Drain on absorbent paper. Sprinkle with granulated sugar.
