Substitutes for cream

One of the things that many of us don't keep on hand is cream. But some of the best recipes calls for either heavy or light cream. Here are some substitutes, along with some for whipped cream that are just satisfactory but not really great: Heavy Cream - 1 cup: (Not for whipping) ¾ cup milk plus ¼ cup butter or margarine Light Cream or Half and Half - 1 cup: ⅞ cup milk plus 3 Tbsp. butter or margarine or- ½ cup evaporated milk plus ½ cup whole milk

Whipped cream - 1 cup: 1 cup nonfat dry milk plus 1 cup ice water. Whip and sweeten to taste. Use immediately, as it will not hold its shape. or- 1 cup ice-cold evaporated milk. Whip and sweeten to taste. Use immediately.
