Yield: 6 Servings
|1 cup||Cottage cheese|
|½ cup||Plain yogurt|
|½ cup||Water-packed tuna (white; pref.solid pack), drained|
|1 cup||Chopped fresh spinach|
|1 teaspoon||Chopped fresh dill|
|1||Clove garlic; minced|
|2||Whole scallion; minced|
|2 teaspoons||Frozen apple juice concentrate; thawed|
|1 teaspoon||Apple cider vinegar|
In a mixing bowl, blend together the cottage cheese, yogurt, and tuna, breaking up the chunks of tuna to make a relatively smooth mixture. Add the remaining ingredients and blend thoroughly together. Cover the bowl and refrigerate for 1 hour.
NOTES : Makes 2 cups. Refrigerates: 4 days (mix thoroughly if the dip has been sitting for any time. This is a fabulous dip for steamed vegetables.
You might also stuff eggs with Sticky Dip or serve it on wedges of pita. It is truly versatile; everyone in the family will invent his/her favorite uses.
