3Or 4 zucchini (or yellow summer squash) sliced
1cupWhole kernel corn
Onion, chopped
1Jalapeno pepper, seeded and chopped
Salt to taste

Directions

Mix above ingredients and cook (or steam) until tender. Drain and top with: ¾ cup grated cheddar or Monterey Jack cheese. Bake about 10 minutes at 350 .
