| 1 | cup | Whole kernel corn |
| ⅓ | Onion, chopped | |
| 1 | Jalapeno pepper, seeded and chopped | |

Directions
Mix above ingredients and cook (or steam) until tender. Drain and top with: ¾ cup grated cheddar or Monterey Jack cheese. Bake about 10 minutes at 350 .
