Split pea hummus

Ingredients

| 1 | cup | Dried green split peas |
| ½ | cup | Tahini |
| 1 | tablespoon | Olive oil |
| ⅓ | cup | Lemon juice |
| 2 | Garlic cloves; minced | |
| 1½ | teaspoon | Dried mint |
| 4 | tablespoons | ;water |
Directions
Cook the split peas in 3 cups of water for 45 to 60 minutes on the stovetop, or 8 to 12 minutes in a pressure cooker.
Place all ingredietns in a food processor and blend until smooth and creamy, adding enough water to achieve desired consistency. Yields: 2½ cups.
Serve at room temperature.
