Spinach-orange toss

Quantity Ingredient
1 can (10 1/2 oz) Mandarin oranges; drained
6 cups Spinach or other greens; torn in bite-size pieces
1 small Cucumber; thinly sliced
1 Avocado; peeled and sliced, optional
2 tablespoons Green onions; sliced
½ teaspoon Grated orange peel
¼ cup Orange juice
¼ cup Oil
2 tablespoons Sugar
2 tablespoons Wine vinegar
1 tablespoon Lemon juice
¼ teaspoon Salt

DRESSING

Combine ingredients for dressing in a covered container and shake. Combine remaining ingredients in a bowl, add dressing, toss lightly. Serves 8.
