Spinach-orange toss

Ingredients

| 6 | cups | Spinach or other greens; torn in bite-size pieces |
| 1 | small | Cucumber; thinly sliced |
| 1 | Avocado; peeled and sliced, optional | |
| 2 | tablespoons | Green onions; sliced |
| ½ | teaspoon | Grated orange peel |
| ¼ | cup | Orange juice |
| ¼ | cup | Oil |
| 2 | tablespoons | Sugar |
| 2 | tablespoons | Wine vinegar |
| 1 | tablespoon | Lemon juice |
| ¼ | teaspoon | Salt |
Directions
DRESSING
Combine ingredients for dressing in a covered container and shake. Combine remaining ingredients in a bowl, add dressing, toss lightly. Serves 8.
