Measure | Ingredient |

1 can | (10 1/2 oz) Mandarin oranges; drained |
6 cups | Spinach or other greens; torn in bite-size pieces |
1 small | Cucumber; thinly sliced |
1 | Avocado; peeled and sliced, optional |
2 tablespoons | Green onions; sliced |
½ teaspoon | Grated orange peel |
¼ cup | Orange juice |
¼ cup | Oil |
2 tablespoons | Sugar |
2 tablespoons | Wine vinegar |
1 tablespoon | Lemon juice |
¼ teaspoon | Salt |
DRESSING
Combine ingredients for dressing in a covered container and shake. Combine remaining ingredients in a bowl, add dressing, toss lightly. Serves 8.
