Spicy cran-apple oat bars

Ingredients

1 cup Packed light brown sugar
½ cup Sugar
¼ cup Soft margarine
1 teaspoon Baking soda
1 teaspoon Cinnamon
½ teaspoon Ginger
½ teaspoon Salt
1 cup Unsweetened applesauce
1 large Egg
2 Egg whites
1 teaspoon Vanilla extract
1 cup Flour
½ cup Whole wheat flour
3 cups Oatmeal
1 cup Dried cranberries; or dried cherries

Directions

Heat oven to 350 degrees. Line a 13"x9" baking pan with foil, letting foil extend 2" from both ends. Spray with cooking spray. With mixer on low speed combine brown sugar, white sugar, margarine, soda, cinnamon, ginger and salt until just blended. On med. speed, beat in applesauce, egg, eg whites and vanilla. Stir in flour until blended, then oatmeal and cranberries until well mixed. Spread evenly in pan. Bake 30-35 min. or until lightly browned around edges. and just set in the center. Cool completely in pan on a wire rack. Lift pan by foil ends and cut into bars.

NOTES : The original recipe used 1½ cup white flour--I used 1 cup white flour and ½ cup wholewheat flour to increase the fibre from 1⅘ gr. to 2⅕ gr. I also change the applesauce to unsweetened applesauce.
