Spicy broccoli slaw

Yield: 1 Servings

Measure Ingredient
¼ cup Thinly sliced green onions
1 pack (16 oz) ready to use broccoli slaw or 1 small head of cabbage. (If your kids don't like broccoli, this is a great way to disguise it. Or tell 'em its what the dragons eat or whatever new fad they are in to).
1 Clove garlic; peeled & minced
2 teaspoons Sesame oil
¼ cup Rice vinegar
2 tablespoons Soy sauce
¼ teaspoon Hot red pepper flakes

The Idaho Power sends a recipe each month with its bill. I suppose they hope it will reduce the sting you get when you read the amount of the bill.

However, I have always found that their recipes are good, so here is one: (I left red pepper flakes out because I don't like too much of that kind of heat in what I eat.)

Place green onion and broccoli slaw or shredded cabbage in a large bowl. In a small bowl, combine dressing ingredients and sg\tir well. Pour over salad and toss well. Cover and marinate for two hours in the refrigerator. Serves six.

This looked like an awful lot of salad when I made it, but somehow the dressing soaks in and you don't have nearly as much as you think. Posted to TNT - Prodigy's Recipe Exchange Newsletter by ellenmirvine@... (Ellen M Irvine) on Jul 24, 1997
