Spiced pilaf

Measure Ingredient
1 cup Long grain rice
1 teaspoon Salt
2 cups Boiling water
1 teaspoon Cinnamon
¼ cup Raisins
¼ cup Chopped spring onions
¼ cup Roasted pinenuts
2 tablespoons Chopped coriander

In a large microwave-proof jug, place rice, salt, boiling water cinnamon, raisins and spring onions.

Microwave covered on high for 12 minutes.

Stand 5 minutes.

Toss through pinenuts and coriander.

Fork through prior to serving.
