Spiced parsnips

Yield: 4 servings

Measure Ingredient
1 750 gram pac frozen baby parsnips
50 grams Butter; melted (2oz)
3 tablespoons Soft brown sugar
1 teaspoon Cinnamon
1 teaspoon Grated lemon zest

Preheat the oven to 220 C, 425 F, Gas Mark 7.

Cook the parsnips in boiling water for 2 minutes then drain and toss them in the melted butter.

Mix together the soft brown sugar, cinnamon and grated lemon zest.

Roll the buttered parsnips in the sugar mixture and bake in the oven for 20 minutes.
