Spiced cheese savouries

4 | ounces | Fresh wholemeal breadcrumbs |
4 | ounces | Vegetarian mature hard cheese; e.g. Cheddar or |

1 | small | Onion; finely chopped |
1 | tablespoon | Fresh parsley; chopped |
2 | teaspoons | Finely chopped sun dried tomatoes |
4 | teaspoons | Cayenne pepper |
½ | teaspoon | Paprika |
3 | \N | Free-range eggs; separated |
\N | \N | Salt and pepper |
2 | ounces | Breadcrumbs; for coating |
1. Mix the cheese and breadcrumbs with the onion, parsley, sun dried tomatoes and spices.
2. Mix in 3 egg yolks and 1 egg white. Season lightly and shape the mixture into small balls, or roll into sausage shapes.
3. Lightly beat the remaining two egg whites. Dip each savoury into the egg white and then into the breadcrumbs.
4. Place on an oiled tray and bake for 15-20 minutes at 190øC/375øF/gas mark 5. Turn twice until crisp and well browned.
Serve hot or cold.

NOTES : Makes about 12. Do use a well flavoured cheese to make this or the result can be bland. It is easy to double or treble the recipe for parties.
