1 | pounds | Lean ground beef |
3 | Green onions, chopped | |
1 | large | Clove garlic, minced |
2 | teaspoons | Minced gingerroot or 1/2 tsp ground ginger |
2 | cups | Cooked rice, preferably basmati |
4 | cups | Frozen Oriental mixed vegetables |
3 | tablespoons | Soya sauce |
Directions
1. In a large nonstick skillet over high heat, cook beef, breaking up with a wooden spoon, for 5 minutes or until no longer pink. Add green onions, garlic and ginger; cook, stirring, for 1 minute. Stir in rice; cook stirring, for 2 minutes.
2. Add vegetables and soya sauce. Reduce heat to medium, cover and cook, stirring occasionally (adding 2 tbsp. water if necessary to prevent from sticking), for 5 minutes or until vegetables are tender. Tip: Cook extra rice ahead and keep it handy in the fridge. Or use instant rice prepared according to package directions. Yield: 4 servings Typed in MMFormat by cjhartlin@...
