Special novelli pudding

Yield: 6 servings

Measure Ingredient
150 grams Bitter dark chocolate - 70% cocoa
150 grams Unsalted butter
4 Eggs
4 Egg yolks
90 grams Golden natural castor sugar
20 grams Flour

1 Finely cut the chocolate. Boil the butter. Have the eggs ready at room temperature, in a mixer to combine with the golden natural castor sugar.

Pour the boiling butter over the chocolate, making sure it is melted.

2 Add to the egg and sugar mix on a medium speed and fold in the flour.

Pour into 6cm diameter buttered moulds before it sets. Once set, it will keep.

3 Cook at 180c for 10-12 minutes (using a fan-assisted oven helps). Serve immediately.

4 To serve: sprinkle white chocolate ice cream (from good supermarkets) with sugar over the pudding and garnish with a strawberry.
