|2 \N||Tubs ricotta cheese|
|2 \N||Handfuls dried fruit; diced|
|1 \N||Lemon; zest of|
|2 ounces||Vanilla sugar|
|2 \N||Egg yolks|
|2 ounces||Ground almonds|
Empty two tubs of ricotta into a Mouli and mash into a bowl. Add the ground almonds, the egg yolks and stir.
Next add the diced dried fruit, sugar and lemon zest. Mix all together.
You can either serve cold or cook in a medium oven for half an hour.
