Soft veggie tacos

| 2 | cups | Reserved Chili Succotash |
| 4 | ounces | Monterey jack cheese with |
| Peppers -- shredded | ||
| 2 | cups | Reserved Bok Choy Cole Slaw |
| 1 | large | Tomato -- chopped |
Directions
Cut the avocado lengthwise into ¼'s and discard the pit. Strip off the peel from each ¼. Dice the flesh into small pieces and toss with the lemon juice. Set aside. Wrap the tortillas in a dampened towel and warm in a microwave oven for 1 minute. Heat the reserved succotash in a heavy saucepan over medium heat, stirring frequently.
Serve the tortillas, succotash, shredded cheese, coleslaw and chopped tomato for each person to assemble.
