Smoked salmon albondigas

Ingredients

¾poundsGood quality smoked salmon; chopped very coarse
3tablespoonsFinely chopped sweet red onion
1teaspoonFinely minced garlic
1teaspoonFinely minced lemon zest
1tablespoonFinely chopped fresh cilantro
(or a mixture of fresh basil and mint)
Salt; to taste
Freshly ground white pepper; to taste

Directions

Mix salmon, onion, garlic, zest and cilantro together and season lightly with salt and pepper. Form into even heaping teaspoon size meatballs and set aside covered and refrigerated until ready to use.
