SAUCE
Fry onions in wok with vegetable oil. Add pork, then carrot, fish sauce, shrimp paste, stock, mint and coriander. Fry all this until pork is cooked.
SAUCE:
When pork is cooked, pour this over it.
Put some rice noodles in boiling water until soft. Drain. Put in bowls andplace pork mixture on top. Sprinkle with coriander . You can add more fish sauce to taste.
