|2 pounds||String Beans|
|2 \N||Slabs Bacon cut through rind at 1/2\" intervals|
|4 tablespoons||Bacon Fat Or Vegetable Oil|
|1 tablespoon||Red Wine Vinegar|
|1 \N||Clove Garlic -- minced|
|\N dash||Cayenne Pepper|
Wash the beans and place on top of the bacon in a saucepan. Barely cover with water. Add the other ingredients, except the salt and cayenne pepper. Simmer, partially covered, at least 1 hr, until the liquid has almost evaporated. Add salt and cayenne pepper to tatse, stir, cover again, and simmer a few mins, until the water has completely evaporated. Serve the same or the following day.
