Slavic potato bread

Measure Ingredient
¾ cup Ricotta or cottage cheese
2 teaspoons Active dry yeast
2⅔ cup Bread flour
¾ teaspoon Grated nutmeg
¾ teaspoon Salt
¼ teaspoon Cayenne
¾ cup Mashed potatoes
1 \N Whole egg
1 \N Egg yolk
⅓ cup Water

1. Drain the cheese in a sieve lined with cheesecloth or a sturdy paper towel for 30 minutes. Discard the liquid.

2. Add all ingredients, including the drained cheese, in the order suggested byyour bread machine manual and process on the bread cycle according to the manufacturer's directions.
