Shrimp verde

Ingredients

1poundsCooked, cleaned shrimp,
Chopped in 1/4inch dice
¼cupLime juice
¼poundsTomatillos, husks removed
And diced
1bunchGreen onions, sliced
4Jalapenos, seeded and
Chopped
1Clove garlic, peeled
1bunchCilantro leaves, chopped
1smallAvocado, peeled and pit
Removed
1teaspoonSea salt
½teaspoonFreshly ground black pepper

Directions

Marinate the shrimp in the lime juice for one hour. Drain and reserve the juice. In a large bowl combine the shrimp, tomatillos, green onions, jalapenos, garlic, cilantro, avocados, salt and pepper and toss to coat.

Serve immediately.

Yield: 4 to 6 servings
