Shallot bruschetta+

Yield: 2 servings

Measure Ingredient
3 tablespoons Olive oil
5 larges Shallots or green onions thinly sliced
4 Slices french bread (3x5")
Freshly grated Romano cheese
Freshly ground black pepper

Preheat broiler. Heat oil in a heavy small skillet over medium heat.

Add shallots and saute till tender, stirring frequently, about 5 minutes.

Broil one side of the bread until toasted. Spread shallot mixture on second side of bread. Sprinkle generousely with pepper and cheese.

Broil until beginning to brown. Serve immediately.
