2 larges | Potatoes; ( 1 1/2 pounds) boiled in their skins |
1 \N | Garlic clove; minced |
\N \N | Vegatable oil |
2 tablespoons | Bread crumbs or matzo meal |
\N \N | Salt |
\N \N | Freshly ground black pepper |
\N \N | Sesame seeds |
Pell the potatoes and mash until smooth. ADD the garlic, 1 tbsp of the oil, and the bread crumbs. Season to taste with salt and pepper. Blend well.
Shape into thin latkes. Pour sesame seeds into a flat plate and press both sides of the latkes into the seeds to coat then. In a large heavy skillet, heat ¼ inch of oil. Place the latkes in the hot oil and fry on both sides until golden brown. Drain onpapper towels. Serve immediately.
