Sesame oven-fried fish

¼ | cup | Skim milk |
¼ | cup | Fine dry bread crumbs |
¼ | cup | Yellow corn meal |
1 | tablespoon | Toasted sesame seed |
1 | tablespoon | Snipped fresh coriander; or 1 ts. dried cilantro; crshd |
¼ | teaspoon | Dry mustard |
½ | teaspoon | Garlic powder |
14 | teaspoons | Pepper |
Directions
Rinse fish and pat dry with paper towels. Pour milk into shallow pan. In another shallow pan, combine crumbs, corn meal, sesame seeds, coriander, mustard, garlic powder and pepper. Dip fish into milk, then coat with crumb mixture. Spray a 13x9x2 inch pan with non-stick cooking spray. Arrange fish in pan. Bake at 450 degrees until golden and fish flakes easily when tested with a fork (allow 4 to 6 minutes per ½ inch thickness).
