Yield: 8 Servings
|1½ pounds||Ground turkey|
|½ cup||Cream of Wheat|
|½ cup||Egg substitute|
|1 \N||Clove garlic, minced|
|1 teaspoon||Dried basil leaves|
|1 pack||(10 oz) chopped spinach, thawed, drained|
|½ cup||Chopped red pepper|
|¼ cup||Minced onion|
|1 tablespoon||Country-style Dijon mustard|
In large bowl, thoroughly combine turkey, cereal, egg substitute, ketchup, garlic and basil. Stir in spinach, pepper and onion. Shape into 9x4-inch loaf. Place in greased 13x9x2-inch baking pan. Bake at 350° for 45 minutes.
Blend mustard and honey; brush over meatloaf. Bake 15-25 minutes more or until internal temperature reaches 165°. Let stand 10 minutes before slicing.
