Savory turkey meatloaf florentine

Ingredients

½cupCream of Wheat
½cupEgg substitute
½cupKetchup
1Clove garlic, minced
1teaspoonDried basil leaves
1pack(10 oz) chopped spinach, thawed, drained
½cupChopped red pepper
¼cupMinced onion
1tablespoonCountry-style Dijon mustard
1tablespoonHoney

Directions

In large bowl, thoroughly combine turkey, cereal, egg substitute, ketchup, garlic and basil. Stir in spinach, pepper and onion. Shape into 9x4-inch loaf. Place in greased 13x9x2-inch baking pan. Bake at 350° for 45 minutes.

Blend mustard and honey; brush over meatloaf. Bake 15-25 minutes more or until internal temperature reaches 165°. Let stand 10 minutes before slicing.
